Coffee is decaffeinated while it is still green, before roasting. The caffeine is drawn out with water, with carbon dioxide (CO₂) or with a solvent such as ethyl acetate. In the so-called sugarcane process, the ethyl acetate comes from fermented sugarcane. Swiss Water and Mountain Water are proprietary methods that use water alone. Whatever the method, decaf is not completely free of caffeine: a small amount always remains. Many speciality roasters now treat decaf like any other coffee, with origin, process and tasting notes. This page lists every coffee the roaster sells as decaffeinated.
