A moka pot, or stovetop coffee maker, uses steam pressure in the lower chamber to push hot water up through a basket of ground coffee. The result is strong and concentrated – closer to espresso than to filter, though brewed at far lower pressure than an espresso machine. Grind a little coarser than for espresso, fill the basket level without tamping, and take the pot off the heat as soon as the coffee starts to sputter. Medium and darker roasts are the usual choice, because a moka pot easily brings out bitterness in very light ones. Coffees sold for espresso often work too: compare espresso beans.
