A cafetière (French press) steeps coarsely ground coffee in hot water; then a metal mesh filter is pressed down to hold back the grounds. With no paper filter, more of the coffee's oils and fine particles reach the cup, which gives a fuller body than pour-over. Light and darker roasts both work in a cafetière. If the cup tastes muddy or bitter, grind coarser and press gently; if it tastes thin, grind a little finer or let it steep longer.
